Aloo Sabhaji Recipe

Ingredients (serves 3–4)

  • 4 medium potatoes, peeled and cubed

  • 2 tbsp oil

  • 1 tsp mustard seeds

  • 1 tsp cumin seeds

  • 1 medium onion, finely chopped

  • 1–2 green chilies, slit (optional)

  • 1 tbsp ginger-garlic paste

  • 2 medium tomatoes, finely chopped or pureed

  • ½ tsp turmeric powder

  • 1 tsp red chili powder (adjust to taste)

  • 1 tsp coriander powder

  • ½ tsp cumin powder

  • Salt to taste

  • 1–1½ cups water

  • Fresh coriander leaves, chopped, for garnish

Method

  1. Heat oil in a pan. Add mustard seeds and let them splutter.

  2. Add cumin seeds. Sauté for a few seconds until aromatic.

  3. Add chopped onions and green chilies. Sauté until onions turn golden brown.

  4. Add ginger-garlic paste and cook for 1–2 minutes until the raw smell disappears.

  5. Add chopped tomatoes, turmeric, red chili powder, coriander powder, cumin powder, and salt. Cook until tomatoes are soft and oil starts separating.

  6. Add cubed potatoes and mix well with the masala.

  7. Pour in water, cover, and cook on medium heat for 15–20 minutes, or until potatoes are tender.

  8. Garnish with fresh coriander leaves before serving.

Serving Suggestion

Serve hot with chapati, puri, bhakri, or rice.
